Banana Pancakes

1 egg
30g BBF Organic Coconut Sugar
20g BBF Organic Coconut Flour
40g brown rice flour
1/4 tsp xanthan gum
1/2 tsp baking powder
a pinch of salt
1/2 Cup coconut milk
2 large, very ripe bananas, mashed
1 tsp BBF Organic Chia Seeds
1 Tbsp BBF Naturally Refined Organic Coconut Oil, for frying


Mix chia seeds with 3 tsp. water and let sit for 10 minutes.

Whisk egg and coconut palm sugar together in a large bowl until light and frothy. Add chia mixture and mix well.

Sift flour blend, baking powder and salt into the egg mixture. Stir in coconut milk and mashed bananas and mix until combined well.

Heat oil in a large skillet over medium heat. Pour 2 tbsp. of batter into the skillet at a time, spreading it out to make a thin layer. Cook until lightly browned on both sides.

Serve with fresh fruit or jam.
