BBQ Chicken Quinoa Bowl

Nothing beats coming home from a long day of anything whether it be work, being the chauffeur to kids or a day outdoors and then having the house filled with the aroma of a hot delectable meal. Yea that is the dream and we know reality is never a hot meal right when you get home...or is it? If you feel this way time to get yourself a slow cooker and make this bomb BBQ chicken quinoa bowl. This recipe is so easy and so delicious. The slow cooker allows for all the flavors to meld together into one heavenly bowl. Get a taste of BBQ "beefed" up with quinoa.


Add All Ingredients to Cart
3 boneless chicken breasts
1/2 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 Cup chicken broth
1 Cup bbq sauce
1 red onion, diced
1 Can black beans, rinsed and drained
1 Can corn, drained
4 Slices turkey bacon, cooked and chopped
2 Cups BBF organic quinoa
1/4 Cup cilantro, chopped
2 green onions, chopped
1 avocado, sliced


Place chicken in crock-pot. Pour in chicken broth. Sprinkle with smoked paprika, onion powder and garlic powder. Cover and cook on low 4 hours.
After four hours, remove chicken and shred. Pour liquid out of crock pot. Place shredded chicken back in crock-pot. Add BBQ sauce, red onion, black beans, corn and bacon. Stir well to coat chicken. Cover and cook on low another 30 minutes.
Add cooked quinoa to chicken mixture. Stir in cilantro and green onions.

1 serving is 3/4 cup:

Optional add 1 cubed avocado.
