PBfit Gluten Free Pancakes
|1 whole wheat pie crust, pre cooked|
|1-1 1/2 lbs strawberries, sliced or quartered|
|FRUIT GEL -|
|1/2 c water|
|1/3 c BBF Agave||
|1/2 lemon, juiced|
|3 Tbsp corn starch|
Fill pre-cooked pie crust with either full, sliced, or quartered strawberries (whichever you prefer). In a blender, combine water, agave, 8-10 strawberries, and lemon juice. Blend on “high” or “liquefy” until mix is smooth.
Turn blender to low, remove the top and while blender is blending, add 3 tbsp. of cornstarch 1 tbsp. at a time until the gel is thick.
Pour over the strawberries and refrigerate for 20 minutes and serve. Top with Agave Sweetened Whipped Cream.
