Kansas City Jambalaya

This dish is perfect for those moments when you ask yourself, “What can I make with what I have in the refrigerator and no time to go the store?” If you do not have some of the ingredients, it’s okay to substitute. Try using celery, red peppers, tomatoes, and mushrooms for your vegetables. Have courage and make this recipe your own. However, I do recommend a pressure cooker. See the recipe below!


Add All Ingredients to Cart
2 Cup brown rice
2 Cup water
1 Can (16 oz) red kidney beans (with juice)
1/2 onion (finely chopped)
1/2 carrot (finely chopped)
1/2 green pepper (finely chopped)
2 Tbsp garlic (finely chopped)
1 tsp sea salt
1 tsp black pepper
2 tsp crushed red pepper
1/4 Cup barbecue sauce
1 lb chicken breast or thighs (cut into 1/2 inch pieces)
1 Italian or Andalusian sausage (sliced into 1/4 inch pieces)
1/4 lb shrimp (peeled and deveined)


1. Put all ingredients into a pressure cooker or rice cooker.

2. Bring to pressure and cook for 20 minutes in a pressure cooker or as instructed with a rice cooker.

3. Serve hot, directly from pan to plate.

4. Enjoy!
