PBfit Gluten Free Pancakes
|1 Cup long grain white rice|
|1 Can 13 oz coconut milk|
|1 Tbsp BBF Organic Virgin Coconut Oil||
|1/4 Cup BBF Organic Bourbon Madagascar Vanilla|
|1/4 Cup BBF Organic Agave||
|1 mango, chopped|
1. Cook rice according to package instructions.
2. In a medium saucepan, combine coconut milk, BetterBody Foods (BBF) coconut oil, and BBF agave. Over medium heat, bring milk mixture just to a simmer. Remove from heat and stir in vanilla.
3. Pour ¾ of the coconut milk mixture over the rice and stir well. Refrigerate approximately 30 minutes, until well chilled. Dish into individual servings and top with remaining coconut milk and mango pieces.
