|1 Cup BBF Organic Quinoa||
|2 Cups water|
|1/3 Cup BBF PBfit®||
|2 Tbsp BBF Organic Agave||
|1/2 tsp ground cinnamon|
|2 tsp BBF Virgin Organic Coconut Oil||
|1 Tbsp BBF Organic Coconut Sugar||
|1 large honeycrisp apples, thinly sliced|
In a large saucepan, bring quinoa and water to a boil. Reduce heat to low, then cover and simmer until quinoa is tender, about 15-20 minutes. Remove from heat.
Heat coconut oil in a small sauté pan. Add apples and coconut palm sugar and cook for 2-3 minutes, until apples are crisp-tender.
Stir in PBfit, agave and cinnamon into warm quinoa. Top with apples. Sprinkle additional cinnamon if desired. Serve immediately.
