PBfit Gluten Free Pancakes
|3 Tbsp soy sauce|
|1 Tbsp BBF Organic agave||
|2 Tbsp BBF Organic avocado oil||
|1 Tbsp fresh ginger, grated|
|3 sliced bell peppers|
|8 oz mushrooms, halved|
|1 small red onion, quartered|
|3 zucchini squash, cut in rounds|
|Dash salt & pepper|
1. In a large bowl whisk together the first four ingredients until blended. Add all the vegetables and toss. Marinate for 20 - 30 minutes.
2. Heat grill on high setting. Place grill basket on grill and with a slotted spoon, spoon vegetables into grill basket. Rotate vegetables so that all get grilled evenly, brushing with extra marinade, approximately 8 - 10 minutes.
3. Serve as a side dish or an appetizer with the Spicy Peanut Sauce.
