Chocolate PBfit No Bake Cookies
|1 Large head cauliflower, separarted|
|2 Whole cloves garlic|
|1/4 Cup BBF Organic Virgin Coconut Oil, melted||
|1 tsp red pepper flakes|
|1/4 Cup freshly grated parmesan cheese|
|1 Tbsp fresh parsley, chopped|
|Dash salt and pepper|
1. Preheat oven to 400°F.
2. Spread cauliflower onto a baking sheet and drizzle with 2 tbsp. BetterBody Foods (BBF) coconut oil. Sprinkle with salt and pepper.
3. Drizzle coconut oil over garlic cloves and wrap in tin foil, making an envelope. Roast garlic & cauliflower in the oven for 30-40 minutes, until softened & slightly browned.
4. Place roasted cauliflower, garlic, and red pepper flakes in a large bowl and mash with a potato masher. Sprinkle with parmesan cheese and mix well. Top with chopped parsley.
