|6-8 firm Roma tomatoes, cut into bite-sized chunks|
|1 seedless cucumber, diced|
|2/3 bunch Italian parsley, chopped|
|1/2 red onion, finely chopped|
|1/3 Cup Italian Dressing|
Mix ingredients in a bowl. Pour in Italian dressing, toss and serve chilled or at room temperature.
One handful of baby spinach, chopped; and fresh mozzarella cheese (cubed or balls).
