Lemon Ricotta Pancakes
without fruit toppings
|1 ripe banana, mashed|
|1/4 Cup BBF Organic Naturally Refined Coconut Oil|
|1 1/2 Cups oats|
|1/2 Cup shredded coconut|
|1/2 Cup craisins or other dried fruit|
|1/2 Cup chocolate chips|
|1/2 Cup BBF Organic Agave||

|2 Tbsp almond milk|
|2 Tbsp BBF Organic Chia Seeds||
|1 tsp BBF Organic Bourbon Madagascar Vanilla|
1. Mash the banana with a fork. Mix peanut butter powder and almond milk together and stir into banana. Add all the remaining ingredients and stir till combined.
2. Press the mixture into a plastic container with a lid or 8 x 8-inch pan and freeze for a few hours.
3. Remove from freezer and slice into bars. Wrap individually for a quick and portable snack.
