Okonomiyaki – Savory Cabbage Pancakes with Salmon
One of our favorite Italian dishes is fresh Caprese. One of our not favorite things is not having a great way to get Caprese into our tummy. Insert the Caprese cauliflower pizza—it's gluten free, loaded with bold ingredients, and delicious! Best of all? It's made with BetterBody Foods (BBF) Organic Coconut Flour!
|1 head of cauliflower|
|1/2 Cup parmesan cheese|
|2 Tbsp BBF Organic Coconut Flour||

|1/2 tsp salt|
|1/2 tsp garlic powder|
|1 heirloom tomato|
|1 sliced fresh mozzarella|
|1 bunch chopped basil|
|1 Tbsp extra virgin olive oil|
|1 Tbsp balsamic vinegar|
|Dash salt and pepper|
1. Preheat oven to 400°F.
2. Line 2 flat baking sheets with parchment paper.
3. Pulse cauliflower in a food processor until fine. Steam for about 12-15 mins. Drain well. When cooled enough to handle, place in a cheesecloth and wring out excess water (paper towels work too).
4. Combine cauliflower, eggs, cheese, coconut flour, salt and garlic powder. Divide into 4 parts. Spread into four circles resembling pizza dough. Bake 20 mins, until golden crisp edges.
5. Layer sliced tomato, sliced mozzarella, fresh basil, and drizzle with olive oil and balsamic vinegar.
