|3 large russet potatoes|
|1 large bell pepper, chopped|
|1 small onion, chopped|
|1 Tbsp BBF Virgin Organic Coconut Oil||
|salt and pepper to taste|
|1/4 Cup pepper jack cheese, shredded|
Scrub potatoes and chop into bite sized pieces. Fill a medium sized pot with water and heat until boiling. Add potatoes and boil for 10 minutes. Drain.
Heat oil in a large skillet over medium heat. Add potatoes, onions, and pepper and sauté until tender. Season with salt and pepper.
Sprinkle with cheese and cover to melt.
