Vegan “Cheesy” Mexican Quinoa

Vegan and cheesy usually never go together. Well thanks to our gal Taylor, this recipe just broke barriers (seriously like Berlin Wall status) with this Cheesy Mexican Quinoa pan. The best part about this "Cheesy" dish is that it's literally loaded with nutritious foods that won't slow you down and also cleanup is one pan, so that won't slow the flow either. Mix in chickpeas that help give it that rich creamy texture that cheese does. Thanks to Taylor, author of the blog Food Faith Fitness, for sharing this delicious recipe with us.


Add All Ingredients to Cart
2 tsp olive oil
1 Cup red pepper finely chopped
1/2 Cup Onion finely chopped
1 Tbsp fresh garlic minced
1 1/3 Cup vegetable broth
1 Cup frozen corn kernels
2/3 Cup salsa
2/3 Cup chickpeas, drained and rinsed
1/2 Cup black beans, drained and rinsed
1/2 Tbsp ground cumin
1/4 tsp salt
Dash pepper
1 Cup BBF organic quinoa
cilantro for garnish
