Lemon Blueberry Muffins
|3/4 cup BBF Virgin Organic Coconut Oil||
|2 cups BBF Organic Coconut Sugar||

|4 large eggs|
|1 tbsp vanilla extract|
|1 1/4 cups PBfit||
|1 3/4 cups all-purpose flour|
1. Preheat oven to 350°F. Oil a 9x9-inch baking dish with coconut oil.
2. Beat coconut oil and coconut palm sugar together in a bowl with an electric mixer until smooth. Gradually beat in eggs and vanilla.
3. Gradually blend PBfit and flour into peanut butter mixture and mix until batter is smooth. Pour batter into prepared baking dish and spread evenly in the dish.
4. Bake for about 35 minutes, until a toothpick inserted into the center comes out clean. Cool for 20 minutes. Slice into 18 bars.
