Keto Chocolate Peanut Butter Eggs
|1/2 lb Italian sausage, casings removed|
|1 Tbsp BBF Virgin Organic Coconut Oil||
|2 bell peppers, chopped|
|1 onion, diced|
|1 Cup kale, torn into bite sized pieces|
|8 eggs eggs|
|1/2 Cup milk or cream|
|1 Cup pepper jack cheese, shredded|
|1/2 tsp chili powder|
|1 pinch salt and pepper|
Preheat oven to 400°F.
Cook the Italian sausage over medium-high heat in a pan and set aside.
Add the oil, red peppers and onion and cook slowly until the onions are tender, about 7-10 minutes. Add the kale and sauté until wilted, about 3-4 minutes.
In a large bowl, whisk together eggs, milk, cheese, chili powder, salt and pepper. Add sausage and cooked veggies and stir well. Pour mixture back into the pan and cook over medium heat until the eggs are almost set, about 7-10 minutes.
Transfer the pan to the oven and bake until the eggs have set, about 10 minutes.
