Lemon Ricotta Pancakes
without fruit toppings
This slow cooker apple protein-packed oatmeal recipe was inspired by my mother's classic old fashioned overnight slow cooker oatmeal. You see mom would load up a slow cooker before bed and bam in the morning delicious hot oats was ready after a simple scoop. The only problem she loaded hers with brown sugar, I'm talking LOADED. So we paired her recipe down on the sugar and upped the protein with a protein powder. Feel free to use any flavor of protein or none at all. Cook this overnight and wake up to a bowl full of warm delish!
|1 Cup steel cut oats|
|4 Cups unsweetened almond milk|
|2 apples, chopped|
|1 tsp BBF organic virgin coconut oil||
|1 tsp cinnamon|
|1/4 tsp nutmeg|
|2 Tbsp BBF organic agave||

|Splash lemon juice|
|4 Scoops vanilla protein powder (optional)|
1. Add all ingredients to your slow cooker. Stir.
2. Cook on low for 8 hours or high for 4 hours.**
3. Give it a good stir.
4. Store leftovers in fridge for up to 1 week. To reheat add a splash of almond milk and protein powder and heat up in microwave.
**We make ours overnight so it is ready in the morning.
