Thai Chicken Salad

Get "Thai-t" with lunch this week with a fresh and fully loaded Thai Chicken Salad. This greeny delight combines our PBfit for a nice little peanut sauce without all the added calories, fat and sugars. The mandarin oranges are the perfect natural sweetener to make sure every tooth from savory to sweet is happy. Ingredients

Add All Ingredients to Cart
1 cup coleslaw cabbage mix
2 oz shredded chicken (about 1/2 cup)
1/3 cup BBF organic quinoa
1 green onion, chopped
1/4 shelled edamame
2 Tbsp cilantro
1/4 cup cucumber or celery
1/4 mandarin oranges (naturally sweetened, not in syrup)

Directions

In a large bowl, combine cabbage, chicken, quinoa, onion, edamame, cilantro, and cucumber.

In a small bowl, whisk pb2, water, and honey together. Whisk in mayo, and then vinegar and soy sauce. Toss on salad.
