Lemon Ricotta Pancakes
without fruit toppings
|2 Cups low-fat milk|
|1/4 Cup BBF Naturally Refined Organic Coconut Oil, melted + 1 Tbsp for the griddle||

|2 Cups whole wheat flour pastry flour|
|3 tsp salt|
In a large mixing bowl, whisk wet ingredients together. Add dry ingredients and mix until just slightly lumpy.
Heat griddle on medium-high (400'F). Grease griddle. Pour batter onto griddle (about 1/4 cup at a time) when hot and cook until bubbles form and edges dry.
Turn and cook on the other side.
You can also mix all ingredients in the blender for 30 seconds and pour onto hot griddle 1/4 cup at a time.
